Zucchini boats are the keto vessel that makes any filling look spectacular. This version packs them with seasoned pulled pork (use leftovers from the slow-cooked shoulder recipe, or make a quick seasoned pork mince version), diced peppers, and buries everything under melted Gouda that forms a gorgeous golden crust.

  1. Preheat oven to 200°C (390°F).
  2. Halve zucchinis lengthways. Use a spoon to scoop out the flesh, leaving a 5mm wall. Reserve the scooped flesh.
  3. Brush zucchini shells with olive oil, season with salt. Place cut-side up on a baking tray. Pre-bake 10 minutes.
  4. Meanwhile, chop the reserved zucchini flesh. Cook onion and garlic in olive oil 5 minutes. Add zucchini flesh, cook 3 minutes.
  5. Add pulled pork (or minced pork), paprika, cumin, salt, and pepper. Cook 5 minutes, stirring. Stir in diced roasted pepper.
  6. Fill pre-baked zucchini shells with the pork mixture. Top generously with grated Gouda.
  7. Bake 18-20 minutes until Gouda is bubbling and golden.
  8. Rest 5 minutes. Garnish with fresh parsley. Serve with a dollop of sour cream..
