A true Caesar salad is already pretty close to keto – we just swap out the croutons for crispy bacon pieces and make the dressing from scratch with real anchovies, egg yolk, parmesan, and lemon. The result is deeply savory, creamy, and completely addictive.

- Cook bacon strips until very crispy. Drain and crumble into large pieces – these are your keto croutons.
- To make dressing: mash anchovies and garlic with a fork into a paste.
- Whisk in egg yolk, lemon juice, and Dijon mustard until combined.
- Slowly drizzle in olive oil while whisking constantly to emulsify the dressing.
- Stir in grated parmesan. Season with salt and pepper.
- Toss chopped romaine with the dressing until well coated.
- Top with bacon pieces and a generous handful of shaved parmesan. Serve immediately..

Note
